Rich and creamy yet tangy and salty, this Tom Kha Gai or coconut chicken soup recipe is filling but light and positively bursting with full of flavor.

  1. Put coconut milk into the pot, add chicken stock, lemon grass and galangal.
  2. Follow with chicken and hard vegetables (potato, pumpkin, carrot…) for 5 minute.
  3. Add soft vegetable (tomato, mushroom, bean, baby corn, kaffir lime leaves, broccoli…)
  4. Season with salt, fish sauce, chili and coconut sugar.
  5. Stir to well to combine with lime or lemon juice and add coriander sliced on top
